Chocolate Cake- No Flour, No Sugar

This chocolate cake has no grain whatsoever in it, or sugar for that matter. It has black beans (I promise it doesn’t taste like beans at all!), and xylitol and stevia for the sweetener. Recipe: Ingredients: 1-15 ounce can black beans 5 large eggs or 6 medium eggs 1 tablespoon pure vanilla extract 1/2 teaspoon sea salt 6 tablespoons unsalted organic butter OR extra virgin coconut oil 1/2 cup xylitol, and 2 tsp. stevia (or stevia to taste- brand potency really varies.) 6 tablespoons unsweetened cocoa powder 1 teaspoon aluminum-free baking powder 1/2 teaspoon baking soda 1 tablespoon water Preparation: Oven: 325F. Spray a 9″ cake pan with nonstick spray. Drain and rinse beans in a strainer or colander. Shake off excess water. Place beans, 3 of the eggs and vanilla. Blend on high until beans are completely liquefied. No lumps! Whisk together cocoa powder, baking soda, salt and baking powder. Beat butter with xylitol and stevia until light and fluffy. Add remaining two eggs, beating for a minute after each addition. Pour bean batter into egg mixture and mix. Finally, stir in cocoa powder and water (if using), and beat the batter on high for one minute, until smooth. Bake for 40-45 minutes. Cake is done with the top is rounded and firm to the touch.

AWESOME! Wonderful taste, easy recipe and so moist It didn’t even need any frosting. I made 2 changes:
- Replaced the stevia with another 1/4 cup of xylitol. -
- I made them in muffin cups instead of a full cake. (Use paper liners though, they stuck even in a silicone muffin pan.)
I admit some doubt, especially while working with the black beans. But you were absolutely right. Now I’m going to have fun having friends try them and guess the ingredients ;-D.

I start p3 tomorrow. I will try my best to wait 3 weeks to make it, when I do I will report back. I am going to tell my husband it is low carb only and see if he like likes it. If I tell him it has black beans in it he won’t even try it.

@twilafern Oh great! It’s funny you mention that because I just made some last night and decided to add 1/4 cup more of xylitol- it did taste more sweet and more dessertish which is satisfying. Yes please let me know if you come up with a frosting- I’d like to do that myself but haven’t gotten around to it.
@twilafern The cake was delicious! My husband even loved it. I topped it with sugar-free cool whip. Think I will add a bit more xylitol next time for a bit more sweetness or I will come up with a frosting that is made with xylitol.

@twilafern Yeah it’s nice because it’s pretty low carb and won’t do nearly the damage that a lot of desserts would.
